We specialize in Cajun, Creole cuisine and BBQ cuisine with an Asian flare. Our specialties include but are not limited to traditional Louisiana seafood boils, blackened chicken/shrimp/catfish, gumbo, oysters (cold/chargrilled), sticky ribs, Cajun/fried rice, and pho. Through the use of recipes that have been handed down for generations, fresh ingredients, and on-site cooking, we guarantee you a food experience like no other. Not only will it taste good, it will look good too! Although Louisiana cooking is our thing, we will consider any other request.

OUR SOURCE.

We are dedicated to providing the freshest ingredients we can find. The majority of our seafood is sourced straight from Louisiana and flown in on demand the day before the event. In regards to the oysters and lobster (if not gulf oysters), they are from the east coast!

OUR CRAWFISH.

Our crawfish is SPECIAL. We source them from Louisiana and are the ONLY catering company in the Valley to offer FRESH CRAWFISH cooked right in your backyard. This means we pick it up live from the airport, purge them, and bring them live to cook on-site.

In addition, we do a special SOAK PROCESS that draws BOLD FLAVORS into the shell and flavors the meat. This is a tedious process which no other companies will dare to do. Our crawfish rival the best in the nation…even in Louisiana.

Meet Kevin! It all began when Kevin partnered with Joe to open a restaurant in Colorado. Joe was born and raised in Louisiana and gladly passed on all his families recipes and techniques.

After many successful years in the kitchen and consulting several restaurant openings, Kevin moved to AZ and decided to carry on Joe’s traditional Louisiana flavors. With connections still in Louisiana, he is able to source some of the finest seafood available. Kevin is discipline and unwavering when it comes to quality of ingredients and traditional techniques. With over 18 years in food and beverage, you and your guest will undoubtedly be ecstatic with the flavors and service he brings to the table.
